Wedding Cake Competition

Wedding Cake Competition was held as a part of Congress 2009 by the BC Chapter of the Baking Association of Canada. There were many beautiful cakes by both professional pastry chefs and pastry arts students...(photos @ Flickr) and here's my cake:

I'm so ecstatic and humbled to come in third place in Student Division *hurrah* I'd like to thank Ms. B whose guidance and support I couldn't have done it without.

Here's to the happy couple!

Ganache Cake

Alternating layers of milk chocolate ganache filling and chocolate sponge cake, pressed into a bowl & coated with dark chocolate coating ganache.

Just so you know, the white chocolate thing on the cake is a butterfly, not a moth!

Sacher Torte

My first sacher torte. The lowercase 'h' is not my favourite alphabet to pipe especially with chocolate. Neither is 'a'.

Raspberry Yogurt Cake

I wish I had a cross section photo of this cake... It's a kind of roulade cake - a pistachio sponge cake thinly baked in a shallow sheet pan, rolled up with raspberry yogurt mousse filling inside, and masked/decorated with whipped cream.

update: here's the cross section of another raspberry yogurt cake.

Chocolate Figurine

Green streaks were painted inside a chocolate mould with coloured cocoa butter. Melted white chocolate was poured into the mould, and 10 minutes at room temp + another 10 minutes in the fridge later... the funky bunny was born.

I brought the bunny home and there he was greeted by one of my dogs.

Easter Marzipan Plaque

My marzipan plaque with Easter design. I channeled my inner 5-year-old self who loved Sanrio stuff... Wait. I still love Sanrio stuff!

The curious one.
